Mackays
Mackays only use the finest quality ingredients in their preserves and marmalades. They source all of their strawberries and raspberries from berry fields in eastern Scotland, where the temperate climate allows for the fruit to be grown for longer, resulting in stronger flavours, while all of the bitter oranges used in their marmalades come from Seville - the home of the marmalade orange.
Originally established in 1938 in Carnoustie, the Mackay brothers converted an old carrot processing site into a jam-making facility, sourcing berries from the bountiful fields surrounding them and selling them locally. Now based in a state-of-the-art factory in nearby Arbroath, Mackays still use traditional methods to make their preserves – each batch is cooked in steam heated copper pans use a rolling boil method, during which the fruit and sugar is slowly boiled allowing the flavours to be released before gradually setting. The copper pans that Mackays use are made locally near Dundee, supporting local craftsmanship.
