Plums gathered from traditional orchards in the Vale of Evesham are infused in organic cider vinegar before simmering with red onions to give a pleasing fruity tang to this classic preserve. Pair with charcuterie, cheese or add to gravy.

Fruits of the Forage
Fruits of the Forage make preserves the proper way, taking what produce the seasons have to offer and preserving them for the months ahead.
Born in 2014 from a family with a love for cooking, picking fruit and using the flavours that could be found and grown around them. Fred, the brother of current business owners Bert and Archie, started the business preserving fruit that would otherwise have gone to waste, picked from old orchards, hedgerows and gardens around Cheshire.
Since then they’ve branched out into using abundant wild plants, surplus vegetables and locally grown produce. Their foraging map has grown with the business and whilst Cheshire still provides most of the apples and pears, they now travel to Worcestershire to pick plums and damsons in vast old traditional orchards in the Vale of Evesham.
Since their favourite local damson orchard was cut down to make way for a housing development in 2017, Fruits of the Forage have now planted new orchards and hedgerows, using cuttings from old plum and damson trees. Leaving behind more fruit trees than they have found is now a core part of their mission and they have planted over 1500 heritage fruit trees since 2017, working with farmers, landowners, schools and community groups. By preserving this botanical heritage they hope to create habitats for wildlife and ensure the flavours found in the wild remain for future generations.
