This is a moderately strong creamy blue Scottish cheese, slightly punchier than Fleet Valley Blue. The Barlocco Blue takes it's name from a small, rocky island just off the coast near the farm.
It’s made from pasteurised milk, and is very finely veined, giving a smooth, consistent flavour throughout.
The Ethical Dairy
The Ethical Dairy is an organic family farm based in the Fleet Valley in south west Scotland. After already farming organically for 20 years, they began moving over to the cow-with-calf system, which they fully committed to permanently in 2019, and continue to practice today. Their new approach to dairy farming has contributed to improved health of the herd, increased biodiversity and carbon sequestering across the farm as well as reducing greenhouse gas emissions and energy use.
