Laganory is young, hard cheese with a fresh, sharp and tangy flavour, and a savoury body. The aroma is sharp with pickled notes and the texture is firm with a slight crumble. With age it will become drier and more crumbly.
This Scottish cheese is handmade using vegetarian rennet and raw, organic milk from The Ethical Dairy's cow with calf dairy farm, and is ripened for 2-6 months.

The Ethical Dairy
The Ethical Dairy is an organic family farm based in the Fleet Valley in south west Scotland. After already farming organically for 20 years, they began moving over to the cow-with-calf system, which they fully committed to permanently in 2019, and continue to practice today. Their new approach to dairy farming has contributed to improved health of the herd, increased biodiversity and carbon sequestering across the farm as well as reducing greenhouse gas emissions and energy use.
