Dunlop is a traditional Scottish cheese, similar to Cheddar. First made in Ayrshire, the recipe dates back to the 17th Century. The truckles were dressed in muslin to keep the maturing cheese moist - a method still continued today by Connage Highland Cheese. It matures for 7 months, developing a creamy, nutty and warm flavour profile.
An extra dimension to Connage Highland Dairy's Dunlop, it's smoked using traditional methods over whisky barrel shavings, and has a lovely delicious taste that smoked cheese lovers adore.

Owned by brothers Callum and Cameron, and their wives Jill and Eileen, Connage Highland Dairy is a traditional family-owned, fully organic business situated on their family farm at Ardersier.
Cameron and Eileen manage the organic dairy herd of 150 cows, while Callum and Jill manage the cheese production. Using traditional techniques, they handcraft a delicious range of vegetarian cheeses.
