GC HQ was filled with the most tempting of comfort food aromas the day this recipe was being tested! Cooked low and slow, this one pot wonder is easy for anyone to make, and endlessly versatile too. Try it with our combo of veg or substitute beans for the potatoes, add some greens, your own fav veggie sausages... this is one that’s going to be seeing many Greencity members through the long dark evenings of Autumn & Winter.

Method

Cut onions into 8 wedges each. Chop rest of veg into chunky, bite size pieces, then brown gently with the onions for 10 minutes in a pan with olive oil.

Transfer to large, lidded cast-iron pot. Add sausages, tomatoes, stock, flour and stout, stir gently and pop into a warm oven for 1 hour 30 mins.

Remove lid and put back in oven for further 20 mins.

Serve with chunky bread for moppIng up the delicious sauce. Wholesome, hearty deliciousness!!
