Vegan Sausage Rolls
Almost everybody loves sausage rolls and although traditionally not the healthiest of foods, these home-made ones are in fact packed full of wholefoods and deep flavours meaning they’re not only delicious but nutritious too!
If you have time to make homemade vegan puff pastry that will always taste better, but the Greencity kitchen is such a busy spot we decided to just go with shop bought vegan puff pastry and focus more on the delicious filling!

Vegan Sausage Rolls
Serves: Makes 6 sausage rolls or 12 mini sausage rolls | Cooking and prep time: Approx 1hr
Ingredients
- 1 pack of puff pastry
- Aquafaba for brushing the pastry
- Nigella seeds for sprinkling.
- Flour for dusting
- 1 onion, finely chopped
- 4 cloves garlic
- 1 punnet of brown mushrooms, finely chopped
- 400g can cooked green lentils, drained
- 1 grated tomato
- 1 tbsp tomato puree
- 4-6 sundried tomatoes, finely chopped
- 100g chopped walnuts
- 1 tsp stock powder
- Salt & pepper
Method
- Cook the onion for 5 minutes then add the garlic, fry gently for 3 more minutes.
- Add the finely chopped mushrooms and cook until mushrooms have reduced nicely.
- Add the can of lentils with half the water from the can.
- Add the grated tomato, tomato puree, the sundried tomatoes and the walnuts.
- Combine and simmer for at least 10 minutes.
- Add the stock powder and season to taste.
- When the filling is wet enough to stick together but not so wet that it will make the pastry soggy, it is ready and you can set the filling aside to cool.
- Roll out the pastry and cut it in half lengthways.
- Along the long side of a rectangle, spoon the cooled filling then roll the pastry over the top to form a large sausage roll shape.
- Press down the edges with a fork to make sure no filling escapes.
- Cut your large sausage roll equally into three pieces (or 6 for mini sausage rolls). Brush with aquafaba and then sprinkle with the nigella seeds.
- Place your sausage rolls into the centre of the oven and bake for 25-30 minutes or until the pastry is crisp and golden and the filling is cooked through.
