
Barbeque Tofu Shawarma Recipe
We’re always looking for new ways to cook up the healthy, low fat & versatile protein that is tofu.
With summer on the horizon, we wanted something we could enjoy at a BBQ that is more fun than your standard veggie burger.
Not that there's anything wrong with the humble veggie burger but if this heatwave continues we're going to need some variety!
Tofu Shawarma for BBQ or roasting in oven
Prep & cooking time: 40 mins plus marinading
Serves: approx 4 people
Ingredients
1 450g block firm tofu (we used Clearspot Organic)
For the marinade:
- 75ml of olive oil
- juice & zest of 2 lemons
- 4 cloves minced garlic, or garlic powder equivalent
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1 teaspoon cinnamon
- 1 teaspoon turmeric
- 1/2 teaspoon pepper flakes
- salt & pepper to your liking
Method:
1. Squeeze the water out of the tofu.
2. Using the slice side of a cheese grater grate ribbons of tofu into a bowl.
3. Put marinade ingredients in a jar and shake vigorously.
4. Pour the marinade over the tofu ribbons.
5. Mix gently with your hands and leave to marinade for at least an hour.
6. Place tofu on baking tray on a BBQ. Turn as necessary and cook until edges are crisp.
7. This can also be cooked in a very hot over for approximately 20 minutes…
To serve:
A great shawarma really comes together when it is served.
We served ours in warm pitta with a cucumber salad: vegan yogurt, thinly sliced cucumber & lemon juice
And a crunchy slaw: shredded cabbage, sesame oil, lime juice, fresh chillies & pomegranate seeds.
And pickles. Everything is better with pickles!
